Livio Felluga represents one of the great names in Friulian vinification, through avant-garde winemaking aimed at enhancing the border area. Ribolla Gialla di Felluga is made from the grape variety of the same name, with a centuries-old history that saw its fame grow as early as the Middle Ages and Renaissance. The vineyards are located in the Colli Orientali del Friuli, with soil consisting of ponca soil, a soil of marl and sandstone of Eocene origin, which gives the wine delicacy, full flavour, freshness and minerality. Mainly farmed using the Guyot method, healthy and perfectly ripe grapes are harvested by hand to preserve their integrity. Gently destemmed and left to macerate for a short period, the must obtained is clarified by decantation. This is followed by alcoholic fermentation at a controlled temperature in stainless steel containers. At the end of fermentation, the maintained wine matures on the lees for a few months to increase creaminess and aromatic complexity. Once bottled, it rests in thermo-conditioned rooms for final ageing. Canary yellow in colour with delicate greenish reflections at the glass, on the nose it is bright, summery, Mediterranean and floral. Aromas of wild flowers, lime, hay and Mediterranean scrub alternate with white rose and orange blossom, marrying perfectly with citrus notes of lime, rusty pear, white peach and green apple. Lively, fragrant and progressive. On the palate it is well balanced, fresh and with a long, pleasant acidity. Citrus and delicately bitter finish, closing in a pleasant mineral full flavour. Excellent as an aperitif, this wine pairs beautifully with deep-fried vegetables and flans, with tasty cheeses and with fish based dishes.
