TASTING NOTES

Made by Paolo Panerai from the merger of four wineries back in the ‘70s in the heart of Chianti Classico, Castellare di Castellina has been a point of reference for great wine production in Tuscany since its beginning. Covering nearly 80 hectares and 33 vineyards located on south-east facing hills of various terroirs, they produce wines with character and structure that are ideal for a long ageing process. The winery’s innovation and research through consultation with illustrious oenologists such as Giacomo Tachis and Émile Peynaud has always been in perfect balance with traditional ideas. As such, they strongly believe in not producing wine through blending native and international grape varieties. From this came the desire to make a Chianti Classico that captures the landscape and fits in with Tuscan oenological history. Therefore, using only Sangiovese and Canaiolo grapes grown in limestone and marl soil, ageing takes place in second passage French oak barriques and then in the bottle for another seven months before being sold. The wine has a bright ruby red that moves effortlessly in the glass, revealing aromas that range from violet to small red berry fruits, as well as a spicy touch of rosemary and pepper. Fresh on the palate and consistent with the nose, it has a vibrant and perfectly integrated tannin note thanks to the balanced and not over-powering use of wood. It has a savoury, dry finish that draws you in to have another taste time after time. Perfect as an every-day drink, traditional pairings are highly recommended with this Tuscan red wine such as grilled red meats and medium-aged cheeses. Read more Read less
THE WINERY

Castellare

The activity of Cantina Castellare started in the 1970s in the heart of Tuscany and, since then, it has set itself the objective of making the most of the properties of the area, highlighting the clones of native vines. The close relationship with the land, study and care combine with the search for innovation to create truly unique Tuscan wines. Every detail of the company's commitment and passion can be found in the winery's prestigious bottles. Cantina Castellare is also dedicated to organic and sustainable viticulture not only in terms of respect for the surrounding area, but also to save energy during processing. The process of vinification by gravity, in fact, has the double advantage of preventing stress to the grapes and reducing the environmental impact of the production itself. With one eye on tradition and one on the future, Cantina Castellare asserts itself as an important estate. Name and address of producer/distributor: Castellare - Località Caselle, SP130, 53011 Castellina in Chianti SI. Products from this winery should be stored in a cool, dry place away from heat sources.
