Le Serre Nuove dell'Ornellaia is the second vin of Tenuta Ornellaia, with a blend of 44% Merlot, 30% Cabernet Sauvignon, 13% Cabernet Franc and 13% Petit Verdot, which combines pleasantness and taste-olfactory complexity with great aging potential. The grapes are harvested manually, with a selection of the bunches on a double sorting table before and after destemming and subjected to a soft pressing at the end. In addition to manual selection, optical selection has also been introduced to increase the quality of selection. Each variety and parcel was vinified separately. Alcoholic fermentation took place partly in stainless steel vats, partly in cement steel vats at a constant temperature between 22-28 ºC for two weeks followed by maceration on the skins for 10-15 days. The malolactic fermentation took place in steel vats, then the wines were transferred to new and second-pass barriques. The wine remains in barriques in the cellar of Ornellaia for a period of about 15 months. After the first 12 months, it is assembled and then reintroduced in barriques where it has spent another 3 months. The wine remains in the bottle six months before being placed on the market. The wine has an intense ruby red color in the glass, with purple and violet reflections. Ornellaia’s Serre Nuove reveals without shyness an evident and generous aromatic expression, accompanied by aromas of ripe red fruits. The taste is soft, round and enveloping, but at the same time full-bodied and tannic, showing on the finish great balance, structure and elegance. Its specific expression makes it perfect in combination with pasta with meat sauce or with main dishes of stewed red meat. To fully appreciate its style, this wine should be served at a serving temperature of 16/18 ºC.
