TASTING NOTES

Il Valpolicella Ripasso Classico Superiore di Santa Sofia nasce dalla vinificazione di Corvina e Corvinone e Rondinella. Dopo la raccolta le uve subiscono una diraspatura e pigiatura soffice delle uve per poi macerare circa 10 giorni in acciaio inox, successivamente seguono 3 giorni di macerazione-rifermentazione sulle vinacce di Amarone e Recioto. Dopo la vinificazione il vino viene lasciato riposare 9 mesi in grandi botti di legno di rovere di Slavonia, successivamente per almeno altri 6 mesi direttamente in vetro. È di colore rosso rubino limpido con un'unghia leggermente granata. Al naso emergono amarene sotto spirito, prugne secche, fiori secchi, chiodi di garofano. In bocca è pieno con tannini setosi e vellutati, un’acidità ben equilibrata, per poi chiudere lungo e pulito. Questo vino rosso veneto è perfetto da bere ogni giorno e abbinato a carni rosse. Santa Sofia

In Pedemonte, in the heart of the Veneto region and in one of the best-known areas for the production of quality wines, stands the Santa Sofia winery, inside an ancient aristocratic villa designed and built by the renowned architect Andrea Palladio. Since the 1960s, the winery has been in the hands of the Begnoni family, which has also owned it since then. With its 53 hectares of mainly stony land, the winery, under the leadership of the family, has always had the goal of expanding its distribution both nationally and internationally. Initially intending to offer all typical Veronese productions, the company has focused on specific products and selected crops over time, the products of which are harvested in the vineyard with extreme care at every single step. Today Santa Sofia produces and distributes very structured and elegant red wines, including Valpolicella Superiore Montegradella, Recioto della Valpolicella, Bardolino, Amarone, Arlèo, Merlot Corvina and Predaia.
