TASTING NOTES

Tradizione e famiglia: sono queste le due parole chiave che riassumono la visione dell’Azienda Vinicola Monte Santoccio. Il Valpolicella Classico Superiore Ripasso di Monte Santoccio è un rosso veneto che si pone a metà strada tra la versione base e l’Amarone attraverso la tecnica di produzione detta Ripasso. Questa tecnica consiste nel produrre un vino base del tutto simile al Valpolicella Classico e far partire una seconda fermentazione alcolica aggiungendo le vinacce provenienti dalla produzione dell’Amarone. Nel nostro caso poi si passa ad un affinamento di 24 mesi in legno piccolo, nello specifico botti di Slavonia. Al calice si presenta di un rosso rubino intenso, l’olfatto è complesso e va dalla frutta rossa e scura in confettura, a nuance speziato dolce.
