Les Cretes is identified in the Valdostan landscape for the constant search for quality in the work in the vineyard, with particular attention to the terroir and characteristics of the grapes, then enhanced in the bottle. Valle d'Aosta PDO Fumin is made up of the autochthonous 100% Fumin variety, with destemming of chilled grapes, fermentation of 12 days in stainless steel at a temperature of 24 ºC, with daily pumping over. Aging of 12 months in French oak 300l, is a wine that ages in the bottle for 6 months. The name Fumin derives from the smoke-gray color of its berries, rich in pruine that covers the grapes and that increases the sugar content inside and protects the berries from bacterial or parasitic attacks in the vineyard. Intense ruby red with violet reflections. Fruity nose, with hints of leather and spices. Of great character, the palate is juicy and fragrant with soft tannins and notes of vanilla, juniper and tobacco. Persistent, with licorice on the finish. Recommended with stewed meat, game or grilled meat. To fully appreciate its style, this wine should be served at a serving temperature of 14/16 ºC.
