TASTING NOTES

Made by Paolo Panerai from the merger of four wineries back in the 1970s in the heart of Chianti Classico, Castellare di Castellina represents a point of reference for great wine production in Tuscany. Covering nearly 80 hectares and 33 vineyards located on south-east facing hills of various terroirs, they produce wines with character and structure that are ideal for a long ageing process. The winery’s innovation and research through consultation with illustrious oenologists such as Giacomo Tachis and Émile Peynaud has always been in perfect balance with traditional ideas. As such, they strongly believe in not producing wine through blending native and international grape varieties. I Sodi di San Niccolò represents the peak of production quality in Castellare di Castellina. The first of the Supertuscans to be entered in the top 100 of Wine Spectator with the historic harvest of 1985, I Sodi is fine red wine from Tuscany made from 85% Sangiovese and 15% Malvasia Nera, originating from a single vineyard with limestone soil, located between 350 and 400 metres above sea level. Atter being fermented in concrete tanks, the wine rests for a period ranging from 24 to 30 months in French oak barriques; followed by 12 months in the bottle. The result is an elegant and classy, complex and deep wine, with a ruby red colour and characterised by balsamic, spicy and ripe fruit notes on the nose. The aroma interacts on the palate and the texture is complimented by the refined acidity of Sangiovese, guaranteeing the extraordinary capacity of this wine to be stored and improve over the years. The ageing in barriques makes the tannin sweet and balanced. This is a wine to enjoy on special occasions, perhaps after a further period in the cellar, ideal paired with succulent meat dishes or mature cheeses. Read more Read less
THE WINERY

Castellare

The activity of Cantina Castellare started in the 1970s in the heart of Tuscany and, since then, it has set itself the objective of making the most of the properties of the area, highlighting the clones of native vines. The close relationship with the land, study and care combine with the search for innovation to create truly unique Tuscan wines. Every detail of the company's commitment and passion can be found in the winery's prestigious bottles. Cantina Castellare is also dedicated to organic and sustainable viticulture not only in terms of respect for the surrounding area, but also to save energy during processing. The process of vinification by gravity, in fact, has the double advantage of preventing stress to the grapes and reducing the environmental impact of the production itself. With one eye on tradition and one on the future, Cantina Castellare asserts itself as an important estate. Name and address of producer/distributor: Castellare - Località Caselle, SP130, 53011 Castellina in Chianti SI. Products from this winery should be stored in a cool, dry place away from heat sources.
