TASTING NOTES

Bibi Graetz, as an artist graduated from the Academy of Fine Arts. In love with the natural paradise of Tuscany, he decided in 2000 to abandon his first profession and devote himself completely to country life in the Fiesole hills surrounding the city of Florence. A rising star in the world of Tuscan wines, he has his own way of approaching viticulture: paying particular attention to native varieties and ancient vineyards, he has restored country plots in Rufina, Greve, Panzano and Isola del Giglio, to the point that he has now reached 50 hectares of vineyards. Wines from Bibi Graetz are true works of art that seek to extrapolate the authentic beauty of the area and immortalise it in the bottle. Casamatta Bianco, a wine from Argentario, represents international varieties and old vines. A crisp, salty and fresh-tasting wine, which embodies the sea breeze. Made up of 60% Vermentino, 30% Trebbiano and 10% Ansonica grapes, it is a wine that reflects the terroir of the area, the and the fragrances of the Maremma. The grapes are harvested between Argentario and Capalbio, and after harvesting by hand, they are selected in the vineyard and in the wine cellar on a sorting table. They undergo an initial gentle pressing stage, with dry ice and then they are fermented in stainless steel vats. Fermentation lasts around 15 days and is carried out at very low temperatures to maintain the freshness and varietal characteristics of the grape. Once blending has been carried out, the wine is aged for three months in stainless steel tanks and then bottled. Floral and peach blossom notes, hints of citrus and freshness of the Vermentino emerge on the nose. Pear and exotic fruit, full body and balanced, resulting from the Trebbiano and Ansonica, are perceived on the palate when tasting. Bibi Graetz

Born into a family of artists, after his studies at the Academy of Fine Arts in Florence, Bibi Graetz took over the family vineyards around the castle of Vincigliata in the hills of Florence in 2000 and from a few barriques of Sangiovese, Colorino and Canaiolo his most iconic wines were born: Testamatta and Colore. The artist's background is clearly evident in the bottles where the labels are pictures painted by Bibi. Vineyards well over 50 years old and at altitude, the choice of indigenous vines and a natural approach in the winery are the founding elements of Bibi's vision of organic and sustainable viticulture. In 2019, Bibi Graetz's winery moved to the central square of Fiesole, inside Villa Aurora, a splendid early 19th-century hotel on the hill overlooking Florence and converted into a winery to house Testamatta and Colore, as well as Bibi and his family.
