The grapes, gently crushed and destemmed, are pressed delicately, after which the must ferments in stainless steel at controlled temperatures. At the end of fermentation, after the first racking, the wine remains on the fine lees until February. Continuous bâtonnage enhances the volume and harmonizes the taste. It presents a straw yellow color, highlighted by faint greenish reflections. On the nose, delicate aromas of white-fleshed fruits such as peach and mulberry emerge, along with notes of apple and citrus. On the palate, it is dry, medium-bodied, and intense, with citrusy returns and an herbal finish. Excellent as an aperitif, this white wine pairs perfectly with flavorful fish dishes and fresh cheeses. The ideal serving temperature is 10-12°C.
