TASTING NOTES

We are in Noto, the territory of origin of Nero d'Avola where the Noto DOC lies, at the south-eastern tip of Sicily. With its white soils and ancient vineyards, it has always been at the heart of Nero d'Avola cultivation. Santa Cecilia, named after the family itself, Planeta di Santa Cecilia, is an expression of elegance, strength and balance with unique aromas of Sicily. After harvesting, the grapes are destemmed and squeezed with soft pressing and static settling at a low temperature. Alcoholic fermentation induced by selected yeasts in barriques, followed by ageing with bâtonnage every 10 days. After harvesting, it remains for 21 days in maceration on the skins and then matures for 14 months in barriques. Its purple-red colour verging on violet is immediately apparent, while the nose is full of spices, orange peel, bergamot and carob. On the palate, the tannin immediately takes over, deep and intricate, well balancing the red fruit jam, blackberry and cherry. A wine for classic pairings, such as fibrous red meats, or particular combinations, such as spicy preparations with chilli peppers. Feudo di Mezzo stands out against Etna, in Castiglione di Sicilia, while the work of La Baronia remains in the Capo Milazzo area. The total area of vineyards exceeds three hundred hectares, all of which are raised with the utmost care and with full respect for the differences of individual territories. This is a long and thorough work, requiring precision and great knowledge of the raw material and soil characteristics.
