Production

Champagne Des Grillons is produced from a careful selection of old Meunier vines, situated between the villages of Montigny and Vallée de la Marne. Its name refers to the two main Lieux-Dits that make up the blend: Les Grillons and Les Clos, vineyards on clay and limestone soil. Vinified in steel and partly in wood, with over 30 months on the lees and a final dosage of Extra Brut.

Organoleptic Characteristics

The distinctive characteristics of this terroir are reflected on the palate and nose, with sweet notes of tropical fruit harmoniously balanced by fresh citrus hints. Structured and enveloping, it finds balance in a lively acidity, whilst its bubbles stand out for their refinement and elegance.

Occasion and Pairing

This Champagne is the ideal accompaniment to risotto, whether with vegetables or seafood. It also pairs perfectly with steamed fish and shellfish, stewed fish and mature cheeses, enhancing the flavours in a refined manner.

Serving Temperature

To fully appreciate its style, this wine should be served at a temperature of 8–10°C.

THE WINERY

Eric Taillet

Nestled in the heart of the Marne Valley, Maison Taillet launched its first bottles in 1961. The Taillet family has always been involved in the cultivation of the vine and the production of Champagne began shortly after. Today, the Maison is run by Éric Taillet, 4th generation, who affirms more than ever the philosophy of working the vine in respect for the environment and in harmony with nature. A perfectionist, who wishes to preserve in each of his Champagne, a typicality and a style recognizable at the first sip. The Meunier, the emblematic vine of the Maison Taillet, is grown only from old vines on a living, clay, limestone soil composed of flint, marl and clay. For Éric the Meunier is the fruit that represents the finesse, the length in the mouth, in short, an extraordinary aromatic palette. Vines have been cultivated for many years without herbicides or fertilisers. The Maison aims to grow on living soil and does so by adding organic matter to support microbial life, deep secondary rooting and water reserve.
