TASTING NOTES

Brunello di Montalcino is produced by vineyards that grow on soils composed of a unique mix of rocks, made particular by the geological changes that the Italian territory has undergone during the phenomenon of the land emerged. The harvest of Sangiovese takes place manually and in the vineyard there is a second manual selection of the bunches. Here they are then destemmed and begins the spontaneous alcoholic fermentation in steel, by the work of indigenous yeasts. The wine then ages 42 months in oak barrels and then 6 months in bottle. The glass shows a brilliant ruby red with intense reflections; the aromas recall citrus fruits and red berried fruits such as cherry, raspberry and black cherry. The palate has soft and silky tannins, accompanied by an intrinsic elegance and a good freshness that entice the glass after glass. In combination it is recommended with dishes based on cuts of red meat typical of the Tuscan tradition cooked on the grill or stewed, local game and pasta dishes seasoned with hearty sauces.
