Tradition and family: these are the two key words that sum up the vision of the Monte Santoccio winery. It is a small family-run business which, with its four hectares of vineyards, is located in the heart of the classic area of Valpolicella, more precisely in Fumane. The grapes for this Amarone Valpolicella Classico are harvested and selected exclusively by hand, then dried until mid-January in traditional drying larders here in Valpolicella: Corvina, Corvinone, Rondinella and Molinara. Fermentation is carried out in two separate steps: at the beginning there is an initial cold maceration, lasting 20 days, followed by the actual alcoholic fermentation for the next 30 days. Ageing is then carried out in 500-litre French and American oak tonneaux for about 30 months. In the glass this wine develops an intense ruby red with hints of garnet. On the nose, the aromas explode with hints of red and black berry fruits, fresh and jammy, with a final pleasantly persistent balsamic note. In the mouth it is powerful but elegant, with all-around softness and length, with a perceptible aromatic finish combined with the spiciness of the wood. Ideal paired with a main course of red meat, especially if slow cooked, this will be your go-to Sunday wine to enjoy with family or friends.
