The Pinot Noir, predominant in the blend, is vinified as a rosé, and only after fermentation is it combined with Chardonnay grapes, which undergo a similar process but are vinified in white. Once the cuvée is formed, liqueur de tirage is added, and the bottle rests on the lees for about two years.
The resulting product has an elegant rosé color with a silver edge, enhanced by a fine and persistent perlage. The nose is filled with notes of cherry, strawberry, and raspberry, resting on a floral bed of rose petals, leading to a finish that reveals hints of bread crust. On the palate, it is inviting and creamy, echoing the red berries perceived on the nose, with a lingering finish that leans toward herbal notes.
Athesis Rosé is the perfect bottle for a unique aperitif with friends, but it can also easily complement a dinner featuring substantial dishes like fish and shellfish.
