TASTING NOTES

The wine-growing families of St. Pauls Winery cultivate their vineyards with the utmost dedication, working from vineyard to bottling entirely by hand. Year after year they take care of the 185 hectares of vineyards planted with vines, among the best plots of land in one of the most renowned areas of Alto Adige. Praeclarus Pas Dosé is the vintage sparkling wine par excellence that encapsulates all of the essence of Chardonnay. Brilliant straw yellow in colour with silvery reflections, Praeclarus is a sparkling wine made from wines selected from a single vintage and from the best vintages. After soft-pressing full bunches of the grapes, Pas Dosé sparkling wine matures inside large wooden barrels for several months, with subsequent Metodo Classico bottle fermentation and ageing on native lees in constant temperature-controlled bunkers. Although strong in character, this wine offers delicate hints of citrus and almond blossom, nuances of mountain herbs, ripe apricot and white flowers. The finish is long, with good minerality and notes of brioche and spices. Pas Dosé Blanc de Blancs has an extremely fine and persistent perlage and is best paired with seafood and raw fish, or with a relaxing aperitif with friends. Read more Read less
THE WINERY

St Pauls

Thirty-six farmers, united by a passion for wine and a love of their land, founded the St Pauls Winery in 1907 in the village of the same name in St Pauls, in the province of Bolzano. That group of friends has now grown to 200 winegrowing families who devote body and soul to the production of excellent South Tyrolean wines. St. Paul's vineyards have their origin on glacial soil at different altitudes-between 300 and 700 meters above sea level-embraced by the Alps. This particular location allows not only for different soil compositions, which can give peculiar characteristics to the grapes, but also for constant ventilation and climatic changes that promote excellent maturation. Therein lies the secret to the refinement of St Pauls wineries' wines: they encapsulate the unique notes of their terroir, resulting in reds and whites that are complex yet perfectly balanced between aromaticity, minerality and elegance. The Gewürztraminer is certainly a flagship of the production, made from selected grapes that give it fruit-rich and spicy notes.
