Da oltre cento anni la cantina St. Pauls opera fra le meravigliose valli del Trentino Alto Adige. È infatti dal 1907 che 36 contadini di San Paolo, uniti dalla passione dalla tradizione hanno fondato la cantina dei produttori di San Paolo. Il Blanc de Blancs Brut Praeclarus è un vino che testimonia questa passione, spumante Metodo Classico prodotto interamente da uve Chardonnay, coltivati fra i 300 e i 500 metri sul livello del mare sul terreno dolomitico calcareo del massiccio della Mendola. Il vino base matura in botti di legno prima di effettuare una sosta di almeno 40 mesi sui lieviti. Nel calice si osserva un giallo paglierino carico brillante, contornato da profumi intensi di frutti, fiori bianchi e note di pasticceria e nocciola. In bocca il sorso è estremamente equilibrato, dal perlage fine e persistente e delicato, che invoglia ad un altro calice. LA CANTINA

St Pauls

Thirty-six farmers, united by a passion for wine and a love of their land, founded the St Pauls Winery in 1907 in the village of the same name in St Pauls, in the province of Bolzano. That group of friends has now grown to 200 winegrowing families who devote body and soul to the production of excellent South Tyrolean wines. St. Paul's vineyards have their origin on glacial soil at different altitudes-between 300 and 700 meters above sea level-embraced by the Alps. This particular location allows not only for different soil compositions, which can give peculiar characteristics to the grapes, but also for constant ventilation and climatic changes that promote excellent maturation. Therein lies the secret to the refinement of St Pauls wineries' wines: they encapsulate the unique notes of their terroir, resulting in reds and whites that are complex yet perfectly balanced between aromaticity, minerality and elegance. The Gewürztraminer is certainly a flagship of the production, made from selected grapes that give it fruit-rich and spicy notes.
