TASTING NOTES

For more than a century, St. Paul’s winery has been operating from the beautiful valleys of Trentino Alto Adige. In fact, it was in 1907 that 36 St. Paul farmers, united by their passion for tradition, founded the San Paolo production facility. Blanc de Blancs Brut Praeclarus is a wine that testifies to this passion, a Metodo Classico sparkling wine made entirely from Chardonnay grapes, cultivated at between 300 and 500 metres above sea level on the limestone dolomite soil of the Mendel Massif. The base wine is matured in wooden barrels before resting for at least 40 months on the lees. In the glass, a bright deep straw yellow colour, surrounded by intense aromas of fruit, white flowers and notes of pastry and hazelnut. In the mouth, extremely balanced on the palate, with a fine and persistent delicate perlage that invites another glass. THE WINERY

St Pauls

Thirty-six farmers, united by a passion for wine and a love of their land, founded the St Pauls Winery in 1907 in the village of the same name in St Pauls, in the province of Bolzano. That group of friends has now grown to 200 winegrowing families who devote body and soul to the production of excellent South Tyrolean wines. St. Paul's vineyards have their origin on glacial soil at different altitudes-between 300 and 700 meters above sea level-embraced by the Alps. This particular location allows not only for different soil compositions, which can give peculiar characteristics to the grapes, but also for constant ventilation and climatic changes that promote excellent maturation. Therein lies the secret to the refinement of St Pauls wineries' wines: they encapsulate the unique notes of their terroir, resulting in reds and whites that are complex yet perfectly balanced between aromaticity, minerality and elegance. The Gewürztraminer is certainly a flagship of the production, made from selected grapes that give it fruit-rich and spicy notes.
