For more than a century, St. Paul’s winery has been operating from the beautiful valleys of Trentino Alto Adige. In fact, it was in 1907 that 36 St. Paul farmers, united by their passion for tradition, founded the San Paolo production facility. Blanc de Blancs Brut Praeclarus is a wine that testifies to this passion, a Metodo Classico sparkling wine made entirely from Chardonnay grapes, cultivated at between 300 and 500 metres above sea level on the limestone dolomite soil of the Mendel Massif. The base wine is matured in wooden barrels before resting for at least 40 months on the lees. In the glass, a bright deep straw yellow colour, surrounded by intense aromas of fruit, white flowers and notes of pastry and hazelnut. In the mouth, extremely balanced on the palate, with a fine and persistent delicate perlage that invites another glass. Try it with raw seafood, an aperitif in the mountains surrounded by nature, and light appetisers.
